seal" cover construction
The specially weighted cover and
the snug shoulder fit of the utensil are designed to create a moisture seal.
When cooking begins over medium heat the natural moisture in the food turns to
vapor. This vapor condenses and a thin layer of moisture is formed between the
cover and pan. When the heat is lowered, a semi-vacuum is formed, and the
moisture seal is complete.

crafted handles and knobs
The
sure-grip handles and cover knobs are crafted of durable phenolic and have a
stainless steel flame guard. They stay cool for safe handling and are dishwasher
proof and oven proof to 350 . Although securely attached to the utensil, the
handles and knobs have no protruding rivets - another easy cleaning safety
feature.
