The specially weighted cover and
the snug shoulder fit of the utensil are designed to create a moisture seal.
When cooking begins over medium heat the natural moisture in the food turns to
vapor. This vapor condenses and a thin layer of moisture is formed between the
cover and pan. When the heat is lowered, a semi-vacuum is formed, and the
moisture seal is complete.

sure-grip handles and cover knobs are crafted of durable phenolic and have a
